Peanut Butter Chocolate Chip Cookie Cups combine chewy cookie bases, creamy peanut butter filling, and rich chocolate ganache for the ultimate dessert.

For the Chocolate Ganache:
- 4 oz. high-quality dark chocolate bar, chopped
- 4 oz. heavy cream
For the Peanut Butter Filling:
- ½ cup creamy peanut butter
- ½ cup powdered sugar, sifted
- 1 Tbsp. unsalted butter
- Pinch of salt
For the Cookie Cups:
- 1 batch Kroll’s Kookies cookie dough (omit the chocolate chips)
Optional Additions:
- Sea salt flakes for garnish
- Crushed peanuts for texture
Instructions
- Make the Ganache: Heat heavy cream until warm, pour over chopped chocolate, and whisk until smooth. Chill in the fridge.
- Make the Peanut Butter Filling: Microwave peanut butter, powdered sugar, butter, and salt. Stir until smooth.
- Prepare Cookie Dough: Preheat oven to 400°F. Prepare cookie dough and omit the chocolate chips.
- Shape Cookie Cups: Scoop dough into a muffin tin with liners, press into wells, and bake for 10–12 minutes. Reshape as needed.
- Assemble: Add 2 tsp of peanut butter filling to each cup, followed by 1 tbsp of ganache.
- Set and Serve: Refrigerate for 1 hour if needed. Bring to room temperature before serving.

- Use high-quality chocolate for the ganache.
- Re-shape cookie cups mid-bake to maintain their structure.
- Freeze cookie cups for up to 2 months.
