- 3 tablespoons olive oil, divided
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs (or gluten-free alternative)
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice (from half a lemon)
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté the onions and garlic for 2–3 minutes until softened and slightly golden. Add the spinach and cook for 1 minute until wilted. Set aside to cool for 5 minutes.
- In a mixing bowl, combine ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Add the cooled onion-spinach mixture and gently mix until combined.
- Form the mixture into 12 equal patties. Cover and refrigerate for at least 30 minutes to allow the patties to firm up.
- Heat the remaining 1 tablespoon olive oil in a skillet over medium-high heat. Cook the patties in batches for 3–5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F).
- Serve warm with your favorite side dishes, such as rice pilaf, tzatziki sauce, or grilled vegetables.
Notes
- Storing Leftovers: Store patties in an airtight container in the fridge for up to 3–4 days.
- Reheating: Reheat on a skillet, in an air fryer, or microwave.
- Freezing: Wrap uncooked patties individually in plastic wrap and freeze for up to 2 months. Thaw overnight in the fridge before cooking.
- Air Fryer Option: Cook patties at 375°F for 13–15 minutes, flipping halfway through, until golden brown and fully cooked.
