Ingredients

  • 4 medium-sized beets
  • 4 cups mixed greens (arugula, spinach, kale)
  • 4 ounces goat cheese, crumbled
  • ½ cup toasted walnuts
  • ¼ cup dried cranberries (optional)
  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet.
  2. Roast the beets for about 45-60 minutes until tender. Let cool, then peel and slice into wedges.
  3. In a large salad bowl, mix the greens.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  5. Add sliced beets to the greens along with goat cheese, walnuts, and cranberries if using. Drizzle with dressing and toss gently.
