  • 6 cups pickling cucumbers, diced
  • 1 cup red bell pepper, finely diced
  • 1/2 cup yellow onion, minced
  • 2 cups granulated sugar
  • 2 cups white vinegar
  • 1 tablespoon yellow mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon red pepper flakes
  • 1/4 cup fresh dill, chopped

Instructions

  1. In a large bowl, combine diced cucumbers, red bell pepper, and minced onion. Sprinkle with pickling salt, toss to coat, and let sit for 2 hours to draw out moisture.
  2. Rinse the vegetable mixture under cold water in a colander, then drain well.
  3. In a pot, mix sugar, vinegar, water, mustard seeds, celery seeds, red pepper flakes, and turmeric; bring to a boil until sugar dissolves.
  4. Add the drained vegetables to the brine. Simmer for 10 minutes on medium heat until heated through.
  5. Stir in chopped dill before ladling into sterilized jars. Process in boiling water for 10 minutes or cool completely and refrigerate for up to 3 weeks.
