  • 1/8 teaspoon black pepper
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon fresh lime juice
  • 1/8 teaspoon salt

Instructions

  1. Rinse 1 cup of long-grain white rice until water runs clear. Combine with 2 cups water in a saucepan. Bring to a boil, cover, and simmer on low for 15 minutes. Remove from heat and let sit for 5 minutes before fluffing.
  2. Season 2 chicken breasts with chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
  3. In the same skillet, sauté 2 cups frozen corn in olive oil until charred (5-7 minutes). In a bowl, mix corn with mayonnaise, sour cream, lime juice, spices, salt, pepper, cotija cheese, and cilantro.
