  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream softened butter and granulated sugar until light and fluffy. Add the egg, lime zest, lime juice, and vanilla extract; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture; mix until just combined.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Roll tablespoons of dough into balls and coat in powdered sugar.
  7. Place on the prepared baking sheet and bake for 10-12 minutes or until edges are set but centers remain soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
