  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter
  • 1/4 cup honey
  • 1 tablespoon fresh thyme sprigs

Instructions

  1. Preheat the oven to 400°F and grease an 8×8 inch baking pan.
  2. In one bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg, buttermilk, and melted butter. Add to dry ingredients and mix until just combined.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes until a skewer comes out clean.
  5. Allow cooling completely, then cut into 1 1/2-inch cubes.
  6. To make the honey butter glaze, melt butter in a saucepan over medium-low heat and stir in honey until combined.
  7. Sear cornbread cubes in a hot cast iron skillet until golden brown on all sides.
  8. Toss seared poppers in honey butter glaze and garnish with thyme before serving warm.
