  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 pound baby red potatoes, quartered
  • 3 large carrots, peeled and cut into 1-inch pieces
  • 2 stalks celery, cut into 1-inch pieces
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 1/4 cup fresh parsley, chopped, for garnish
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup milk

Instructions

  1. Brown beef cubes in olive oil in a skillet; transfer to slow cooker.
  2. Sauté chopped onion until softened; add garlic and then transfer to slow cooker.
  3. Add beef broth, diced tomatoes, Worcestershire sauce, thyme, and pepper to slow cooker.
  4. Stir in quartered potatoes, carrot pieces, and celery.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. About 30 minutes before serving, prepare dumplings by mixing flour, baking powder, salt, butter, and milk until soft dough forms.
  7. Thicken stew with cornstarch slurry; drop dumpling dough onto hot stew.
  8. Cook covered on high for an additional 20-30 minutes until dumplings are cooked through.
