  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh pumpkin, peeled and cut into 1/2-inch cubes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  2. Stir in diced onion; cook until softened (about 5 minutes). Add minced garlic; cook for another minute until fragrant.
  3. Mix in cubed pumpkin, diced tomatoes, red kidney beans, cannellini beans, and beef broth.
  4. Season with chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir to combine.
  5. Bring to a boil; reduce heat to low. Cover and simmer for 30 minutes or until pumpkin is tender.
