Description

Ingredients

  • 2 tablespoons maple syrup
  • 1/23/4 teaspoon peppermint extract (use food-grade peppermint oil for the best flavor)
  • 2 teaspoons coconut oil, divided
  • 1 cup vegan dark chocolate, chopped

Instructions

  1. Prepare the Coconut Mixture:
    • Add shredded coconut to a food processor. Blend for 45-60 seconds until the mixture starts to turn dough-like. Scrape the sides and blend in 10-15 second increments as needed.
    • Add maple syrup, peppermint extract, and 1 teaspoon of melted coconut oil. Blend again until the mixture holds together when squeezed.
  2. Shape the Patties:
    • Scoop about 1 tablespoon of the mixture and roll it into a ball. Flatten gently with your hands to form a disc.
    • Place the discs on a parchment-lined baking sheet or plate.
  3. Chill the Patties:
    • Place the shaped patties in the freezer for 10 minutes to firm up.
  4. Melt the Chocolate:
    • In a double boiler or microwave (in 30-second intervals), melt the chopped vegan dark chocolate with 1 teaspoon of coconut oil. Stir until smooth and glossy.
  5. Coat the Patties:
    • Using a fork, dip each chilled patty into the melted chocolate, ensuring it’s fully coated. Tap off any excess chocolate.
    • Place the coated patties back onto the parchment-lined baking sheet.
  6. Set the Chocolate:
    • Chill the coated patties in the refrigerator or freezer for 8-10 minutes, or until the chocolate is firm.
  7. Serve and Store:
    • Peel the patties from the parchment paper and serve.
    • Store in an airtight container at room temperature for 4-5 days, in the refrigerator for up to 2 weeks, or in the freezer for 1 month.

Notes

  • To enhance the mint flavor, use 3/4 teaspoon of peppermint extract, but start with 1/2 teaspoon and adjust to taste.
  • For a festive touch, sprinkle crushed candy canes or coconut flakes on top of the chocolate before it sets.
