- 3 cups shredded unsweetened coconut
- 2 tablespoons maple syrup
- 1/2 – 3/4 teaspoon peppermint extract (use food-grade peppermint oil for the best flavor)
- 2 teaspoons coconut oil, divided
- 1 cup vegan dark chocolate, chopped
Instructions
- Prepare the Coconut Mixture:
- Add shredded coconut to a food processor. Blend for 45-60 seconds until the mixture starts to turn dough-like. Scrape the sides and blend in 10-15 second increments as needed.
- Add maple syrup, peppermint extract, and 1 teaspoon of melted coconut oil. Blend again until the mixture holds together when squeezed.
- Shape the Patties:
- Scoop about 1 tablespoon of the mixture and roll it into a ball. Flatten gently with your hands to form a disc.
- Place the discs on a parchment-lined baking sheet or plate.
- Chill the Patties:
- Place the shaped patties in the freezer for 10 minutes to firm up.
- Melt the Chocolate:
- In a double boiler or microwave (in 30-second intervals), melt the chopped vegan dark chocolate with 1 teaspoon of coconut oil. Stir until smooth and glossy.
- Coat the Patties:
- Using a fork, dip each chilled patty into the melted chocolate, ensuring it’s fully coated. Tap off any excess chocolate.
- Place the coated patties back onto the parchment-lined baking sheet.
- Set the Chocolate:
- Chill the coated patties in the refrigerator or freezer for 8-10 minutes, or until the chocolate is firm.
- Serve and Store:
- Peel the patties from the parchment paper and serve.
- Store in an airtight container at room temperature for 4-5 days, in the refrigerator for up to 2 weeks, or in the freezer for 1 month.
Notes
- To enhance the mint flavor, use 3/4 teaspoon of peppermint extract, but start with 1/2 teaspoon and adjust to taste.
- For a festive touch, sprinkle crushed candy canes or coconut flakes on top of the chocolate before it sets.
