  • 4 large sweet onions (Vidalia or Walla Walla)
  • 4 cups vegetable or chicken broth
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Chopped parsley for garnish

Instructions

  1. Prepare the onions by peeling and trimming the tops and bottoms; leave them whole or quarter based on preference.
  2. In a large pot, combine the broth with salt, black pepper, garlic powder, onion powder, smoked paprika, and olive oil; bring to a boil over medium-high heat.
  3. Add the onions to the boiling broth; reduce heat to low and cover. Simmer for 30-40 minutes until tender.
  4. Stir in fresh thyme during the last 5 minutes of cooking.
  5. Carefully remove the onions and serve on a platter, drizzling with broth and garnishing with parsley.
