One-Pan Chicken with Buttered Noodles

Description

Ingredients

Chicken:

  • 1 pound boneless, skinless chicken breasts (cubed)
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon extra virgin olive oil

Pasta:

  • 8 ounces small pasta shells
  • 1 teaspoon kosher salt
  • 1 tablespoon chicken bouillon powder

Garlic Butter Sauce:

  • ½ cup (1 stick / 113 g) salted butter
  • 2 teaspoons chicken bouillon powder
  • 2 teaspoons minced garlic
  • ¼ cup parmesan cheese (plus more for garnish, optional)
  • Fresh parsley, for garnish
  • Salt and pepper, to taste

Instructions

Chicken:

  1. Mix onion powder, kosher salt, black pepper, and paprika in a medium bowl. Toss chicken cubes in the seasoning mix until evenly coated.
  2. Heat a skillet over medium heat and add olive oil.
  3. Cook chicken for 8–10 minutes, flipping halfway, until golden brown and fully cooked (internal temperature 165°F). Remove and tent with foil to keep warm.

Pasta:

  1. Bring a pot of salted water to a boil. Add bouillon powder and pasta shells. Cook until al dente (as per package instructions).
  2. Reserve 1 cup of pasta water and drain the rest.

Garlic Butter Sauce:

  1. Melt butter in the same pot over medium heat. Stir in chicken bouillon powder.
  2. Add minced garlic and cook for 1 minute. Stir in ½ cup reserved pasta water to create a smooth sauce.

Combine and Serve:

  1. Toss pasta in the garlic butter sauce and stir in parmesan cheese. Add more pasta water as needed to achieve desired consistency.
  2. Plate the noodles, top with cooked chicken, garnish with parsley, and serve warm.

Notes

  • Substitute parmesan with asiago or pecorino romano for a different cheese flavor.
  • To make gluten-free, use gluten-free pasta and ensure bouillon is gluten-free.
