  • 3 cups Granny Smith apples, peeled, cored, and diced
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Make the Pie Crust: In a bowl, whisk flour, salt, and sugar. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Filling: Combine diced apples with sugar, cinnamon, nutmeg, lemon juice, and cornstarch in a bowl; toss well.
  3. Roll Out Dough: Preheat oven to 375°F (190°C). Roll out one disk of dough to 1/8-inch thick. Cut circles to fit muffin tin.
  4. Assemble Pies: Press dough circles into greased muffin tin, fill with apple mixture, cover with another dough circle, seal edges with a fork and cut slits on top.
  5. Bake: Brush tops with egg wash and sprinkle with coarse sugar. Bake for 20-25 minutes until golden brown.
