Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix diced apples with brown sugar, spices, salt, butter, and vanilla until evenly coated. Stir in cornstarch slurry.
- Roll out the pie dough on a floured surface until about 1/8 inch thick. Cut out circles using a round cutter (3-4 inches in diameter).
- Place each circle on the baking sheet and spoon filling onto one side; fold over to form half-moons and crimp edges with a fork.
- Brush tops with an egg wash mixture and sprinkle with coarse brown sugar.
