Instructions

Step 1: Wilt the Spinach

  • Place chopped spinach in a microwave-safe bowl. Microwave for 45 seconds, then drain any excess moisture.

Step 2: Prepare the Cheese Mixture

  • In the same bowl, mix mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Stir until well combined.

Step 3: Assemble the Sandwich

  • Spread the cheese mixture evenly onto two slices of bread.
  • Top each with another slice of bread to form sandwiches.
  • Spread butter (or olive oil) on the outer sides of the bread.

Step 4: Cook the Sandwich

  • Heat a non-stick skillet or cast-iron pan over medium-low heat.
