Instructions
Step 1: Wilt the Spinach
- Place chopped spinach in a microwave-safe bowl. Microwave for 45 seconds, then drain any excess moisture.
Step 2: Prepare the Cheese Mixture
- In the same bowl, mix mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Stir until well combined.
Step 3: Assemble the Sandwich
- Spread the cheese mixture evenly onto two slices of bread.
- Top each with another slice of bread to form sandwiches.
- Spread butter (or olive oil) on the outer sides of the bread.
Step 4: Cook the Sandwich
- Heat a non-stick skillet or cast-iron pan over medium-low heat.
- Place sandwiches, buttered side down, in the pan.
- Cook for 2 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
