Ingredients

Scale

For the Salmon:

  • 4 salmon fillets (skinless)
  • 2 tablespoons olive oil (divided)
  • 2 teaspoons dried Italian seasoning
  • ½ teaspoon Kosher salt
  • ¼ teaspoon cracked black pepper

For the Sauce:

  • 3 tablespoons butter
  • 2 teaspoons garlic (minced)
  • 3 tablespoons flour
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon lemon zest
  • Fresh basil (for garnish)

Instructions

Cooking the Salmon

  1. Season the salmon: Brush 1 tablespoon olive oil over each fillet. Sprinkle with Italian seasoning, salt, and pepper.
  2. Heat the pan: In a large skillet, heat 1 tablespoon olive oil over medium-high heat.
  3. Sear the salmon: Place fillets in the pan and cook for about 3 minutes per side until golden brown. Reduce heat to medium-low and cook until salmon is done. Remove and set aside.

Making the Sauce

  1. Melt butter: In the same skillet, melt 3 tablespoons butter over medium heat.
  2. Sauté garlic: Add minced garlic and cook for 30 seconds until fragrant.
  3. Thicken with flour: Stir in 3 tablespoons flour to form a paste.
  4. Add liquid: Slowly whisk in chicken broth and let it simmer.
  5. Incorporate cream & cheese: Stir in heavy cream and Parmesan cheese, whisking until smooth.
  6. Add sun-dried tomatoes & seasoning: Mix in sun-dried tomatoes, Italian seasoning, and lemon zest. Adjust salt and pepper to taste.

Finishing the Dish

  1. Return salmon to the skillet: Nestle the fillets into the sauce.
  2. Simmer: Let everything cook together on low heat for 10 minutes.
  3. Garnish & serve: Sprinkle with fresh basil and serve warm over pasta, rice, or vegetables.

Notes

  • For a lighter version: Substitute half-and-half or Greek yogurt for heavy cream.
  • For extra flavor: Add a splash of white wine when adding the broth.
  • Make it spicy: Add red pepper flakes or cayenne pepper to taste.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Warm gently on the stovetop with a little broth or cream to prevent drying out.
