Instructions
Cooking the Salmon
- Season the salmon: Brush 1 tablespoon olive oil over each fillet. Sprinkle with Italian seasoning, salt, and pepper.
- Heat the pan: In a large skillet, heat 1 tablespoon olive oil over medium-high heat.
- Sear the salmon: Place fillets in the pan and cook for about 3 minutes per side until golden brown. Reduce heat to medium-low and cook until salmon is done. Remove and set aside.
Making the Sauce
- Melt butter: In the same skillet, melt 3 tablespoons butter over medium heat.
- Sauté garlic: Add minced garlic and cook for 30 seconds until fragrant.
- Thicken with flour: Stir in 3 tablespoons flour to form a paste.
- Add liquid: Slowly whisk in chicken broth and let it simmer.
- Incorporate cream & cheese: Stir in heavy cream and Parmesan cheese, whisking until smooth.
- Add sun-dried tomatoes & seasoning: Mix in sun-dried tomatoes, Italian seasoning, and lemon zest. Adjust salt and pepper to taste.
Finishing the Dish
- Return salmon to the skillet: Nestle the fillets into the sauce.
- Simmer: Let everything cook together on low heat for 10 minutes.
- Garnish & serve: Sprinkle with fresh basil and serve warm over pasta, rice, or vegetables.
Notes
- For a lighter version: Substitute half-and-half or Greek yogurt for heavy cream.
- For extra flavor: Add a splash of white wine when adding the broth.
- Make it spicy: Add red pepper flakes or cayenne pepper to taste.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating: Warm gently on the stovetop with a little broth or cream to prevent drying out.
