  • 1.5 pounds boneless, skinless chicken thighs (cut into 1-inch cubes)
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Green onions (for garnish)
  • Sesame seeds (for garnish)
  • Skewers (metal or soaked wooden)

Instructions

  1. In a large bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Add cubed chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Preheat your grill to medium-high heat (about 400°F) or broil in the oven.
  5. Thread marinated chicken onto skewers with space between pieces.
  6. In a small bowl, mix cornstarch with water to create a slurry.
  7. Grill or broil the kabobs for 8-12 minutes, turning occasionally until cooked through and lightly charred.
  8. Simmer remaining marinade in a saucepan; stir in the cornstarch slurry until thickened (about 2 minutes).
  9. Brush kabobs with glaze during the last two minutes of cooking.
  10. Serve on a platter drizzled with extra glaze, garnished with green onions and sesame seeds.
