  • 2 pounds beef chuck
  • 1/4 cup all-purpose flour
  • 1 large yellow onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 1 (14.9-ounce) can Guinness stout
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1.5 pounds Yukon Gold potatoes

Instructions

  1. Toss beef with flour, salt, and pepper in a large bowl.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef until browned on all sides, then set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened; add garlic and cook until fragrant.
  4. Pour in Guinness stout and scrape up browned bits; simmer for 2 minutes.
  5. Stir in beef broth, tomato paste, thyme, bay leaf, and return seared beef to the pot.
  6. Bring to a boil then reduce heat to low; cover and simmer for 1 hour.
  7. Add cubed potatoes; continue simmering until fork-tender (about 45 minutes).
  8. Remove bay leaf before serving; garnish with parsley and thyme.
