Instructions
Step 1: Cook the Potatoes
- Heat 2 tablespoons canola oil in a large skillet over high heat until hot and shimmering.
- Reduce heat to medium and add diced potatoes.
- Cook, stirring occasionally, until the potatoes are golden brown and starting to soften (about 6 minutes).
Step 2: Brown the Ground Beef
- Add ground beef, diced onion, and diced red bell pepper to the skillet.
- Cook over medium heat, breaking apart the beef with a wooden spoon.
- Stir frequently until the beef is fully browned and no pink remains.
Step 3: Add Seasonings
- Stir in Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, oregano, salt, black pepper, and hot sauce.
- Mix well to evenly distribute flavors.
Step 4: Cook Until Potatoes Are Tender
- Continue cooking for 6-8 minutes, stirring occasionally, until the potatoes are fork-tender.
Step 5: Finish & Serve
- Stir in sliced green onions and adjust seasoning if needed.
- Serve hot, topped with Greek yogurt, shredded cheese, or extra hot sauce.
Notes
- For extra crispy potatoes, cook them separately and add them back at the end.
