  • 64 oz chicken or vegetable broth
  • 3 tablespoons olive oil
  • 1 medium onion, minced
  • 1 medium carrot, grated
  • 3 large potatoes, cubed
  • 4 cups spinach, chopped
  • 1 zucchini, cubed
  • 3 tablespoons lemon juice
  • Garnish: hard-boiled eggs, parsley or dill, sour cream

Instructions

  1. In a large pot or Dutch oven, bring the chicken broth to a boil. Add cubed potatoes and cook on medium-low heat for about 15 minutes until tender.
  2. Meanwhile, heat olive oil in a skillet over medium heat. Sauté minced onion and grated carrot for about 10 minutes until softened.
  3. Add the sautéed onion mixture to the pot with potatoes. Stir in cubed zucchini and chopped spinach; cook for an additional 5-7 minutes.
  4. Mix in lemon juice and add cubed hard-boiled eggs along with chopped herbs. Combine gently.
  5. Serve hot with a dollop of sour cream.
