- 1 tbsp lemon juice

- ½ cucumber, grated and excess moisture squeezed out
- 1 clove garlic, minced (for tzatziki)
- 1 tbsp fresh dill, chopped (for tzatziki)
- 1 tbsp lemon juice (for tzatziki)
- 1 tbsp olive oil (for tzatziki)
- Salt and pepper, to taste (for tzatziki)
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- In a large mixing bowl, combine ground chicken, egg, breadcrumbs, minced garlic, red onion, parsley, oregano, salt, pepper, and lemon juice until just mixed.
- Shape the mixture into small meatballs about 1½ inches in diameter.
- Heat olive oil in a skillet over medium heat and cook meatballs for 8–10 minutes until golden brown and cooked through (internal temperature of 165°F).
- For the tzatziki: Mix Greek yogurt, grated cucumber (excess moisture removed), minced garlic, dill, lemon juice, olive oil, salt, and pepper until smooth. Chill before serving.
