  • 1 large yellow onion
  • 2 cloves garlic
  • 1 1/2 cups uncooked orzo pasta
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 3 cups cooked shredded chicken
  • 1 1/2 cups shredded Gruyere cheese
  • 1 cup crispy fried onions

Instructions

  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
  2. Boil 2 cups of chicken broth in a large pot, add orzo, simmer for 8-10 minutes until al dente, then drain.
  3. In a skillet, melt butter over medium heat. Add sliced onion and cook for 15-20 minutes until caramelized. Stir in minced garlic and cook for another minute.
  4. Sprinkle flour over the mixture, stir for a minute, then whisk in the remaining broth and heavy cream. Simmer until thickened.
  5. Add thyme, salt, pepper, cooked orzo, shredded chicken, and one cup of Gruyere cheese to the skillet. Mix well.
  6. Transfer to the baking dish and top with remaining Gruyere and fried onions.
  7. Bake for 20-25 minutes until bubbly and golden brown. Let stand for 5 minutes before serving.
