  • Non-stick spray (for baking sheet)
  • Lemon wedges (for serving)

Instructions

  • Preheat Oven
    Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with non-stick spray or oil.

  • Prepare Coating Stations
    In one shallow bowl, beat the egg. In a second shallow bowl, mix the grated Parmesan, garlic powder, onion powder, smoked paprika, and red pepper flakes.

  • Coat the Cod
    Pat the cod fillets dry with a paper towel. Dip each fillet into the beaten egg, then press it into the Parmesan mixture to coat both sides evenly.

  • Bake
    Arrange the coated cod fillets on the prepared baking sheet. Bake for 10–12 minutes or until the crust is golden and the fish flakes easily with a fork. Internal temperature should reach 145°F.

    Remove from the oven and let rest for 2–3 minutes. Serve with lemon wedges, optional tartar sauce, and chopped parsley if desired.

  • Use finely grated Parmesan (like the kind in a green can) for the best crust adhesion. Shredded cheese will give a chunkier texture.
  • For extra crispiness, bake the cod on a wire rack over your baking sheet.
  • You can substitute cod with haddock, tilapia, or halibut using the same method.
