  • 1 medium butternut squash (cubed)
  • 1 cup orzo pasta
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • 4 ounces fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss butternut squash with 1 tablespoon olive oil, thyme, garlic powder, salt, and pepper. Spread on the baking sheet and roast for 20-25 minutes until tender.
  3. Boil vegetable broth in a pot, add orzo, and cook according to package directions (8-10 minutes). Drain and set aside.
  4. In a skillet, heat remaining olive oil over medium heat. Add spinach and wilt for 2-3 minutes.
  5. Stir in cooked orzo, roasted squash, and heavy cream. Cook for 2-3 minutes until heated through.
  6. Mix in Parmesan cheese until melted. Season to taste with salt and pepper.
