  • 2 cloves garlic, minced
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cooked chicken
  • 4 ounces fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh thyme sprigs, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook for 5-7 minutes, turning occasionally, until browned and slightly crispy. Remove the sausage from the skillet and set aside.
  2. Add the chopped onion to the skillet and cook for 3-5 minutes until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
  3. Stir in the uncooked orzo pasta, chicken broth, heavy cream, salt, and black pepper. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  4. Stir in the shredded cooked chicken, fresh spinach, and the browned chicken sausage. Continue to cook, uncovered, for 2-3 minutes, or until the spinach has wilted and the dish is heated through.
  5. Remove the skillet from the heat. Stir in the grated Parmesan cheese until melted and creamy. Serve hot, garnished with fresh thyme sprigs if desired.
