Instructions
Step 1: Cook the Chicken
- Season the chicken with Italian seasoning, salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat.
- Cook the chicken for 4-5 minutes per side until golden brown and fully cooked.
- Remove from heat and let rest before slicing.
Step 2: Prepare the Bruschetta Topping
- In a bowl, mix tomatoes, basil, garlic, olive oil, balsamic glaze, salt, and pepper.
- Let it marinate for 10-15 minutes to blend flavors.
Step 3: Cook the Pasta
- Boil salted water and cook pasta until al dente.
- Reserve ½ cup pasta water, then drain and set aside.
Step 4: Make the Creamy Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic and sauté for 1 minute.
- Pour in heavy cream, stirring constantly.
- Add Parmesan and mozzarella, stirring until melted and smooth.
- Season with red pepper flakes, salt, and black pepper.
- Stir in reserved pasta water if the sauce is too thick.
Step 5: Assemble the Dish
- Toss cooked pasta in the creamy sauce.
- Slice the chicken and place it over the pasta.
- Spoon the bruschetta topping over everything.
- Drizzle with extra balsamic glaze and garnish with fresh basil.
Notes
- Adjust balsamic glaze to taste—more for tanginess, less for a milder flavor.
- Add grilled shrimp or tofu as protein alternatives.
- Substitute Greek yogurt for heavy cream to lighten the dish.
- To make it spicier, increase red pepper flakes or add hot sauce.
