  • ½ cup light brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs

  • 1 cup pumpkin puree
  • 4 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by greasing and flouring it or lining it with parchment paper.
  2. In a large bowl, combine flour, baking soda, salt, and spices. Set aside.
  3. In another bowl, mix granulated sugar, brown sugar, oil, eggs, and vanilla until blended; stir in pumpkin puree.
  4. Combine wet and dry ingredients gently until just mixed.
  5. In a separate small bowl, beat cream cheese with sugar until smooth; add egg yolk and vanilla.
  6. Pour two-thirds of the pumpkin batter into the loaf pan; dollop cream cheese mixture on top and cover with remaining batter.
  7. Use a knife to swirl the cream cheese into the batter gently.
  8. Bake for 60-70 minutes or until a skewer inserted comes out clean (moist from cream cheese is fine).
  9. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
