  • 1 bunch scallions, thinly sliced
  • 4 peaches, thickly sliced
  • 3 tomatoes, thickly sliced
  • 12 ounces fresh mozzarella, thickly sliced
  • ⅓ cup grated Parmesan cheese
  • 2 large eggs, whisked
  • 1 cup all-purpose flour
  • ½ cup fresh basil leaves, roughly torn
  • 3 tablespoons vegetable oil
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • ¾ teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon crushed red-pepper flakes
  • 1 teaspoon baking powder
  • ¼ cup half-and-half
  • Extra-virgin olive oil, as needed
  • Flaky sea salt and freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine scallions, corn kernels, parsley, basil, salt, pepper, and red-pepper flakes.
  2. Add flour and baking powder; mix until well combined.
  3. Stir in whisked eggs and half-and-half until a thick batter forms; fold in mozzarella and Parmesan.
  4. Heat vegetable oil in a skillet over medium heat. Scoop ¼-cup portions of the batter into the skillet.
  5. Fry until golden brown on both sides (about 3 minutes each side). Drain on paper towels.
  6. Assemble by layering fritters with peach slices, tomato slices, fresh mozzarella, and torn basil leaves on a platter. Drizzle with olive oil and season with salt and pepper.
