- 2 large eggs, whisked
- 1 cup all-purpose flour
- ½ cup fresh basil leaves, roughly torn
- 3 tablespoons vegetable oil
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh basil
- ¾ teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- ½ teaspoon crushed red-pepper flakes
- 1 teaspoon baking powder
- ¼ cup half-and-half
- Extra-virgin olive oil, as needed
- Flaky sea salt and freshly ground black pepper
Instructions
- In a large mixing bowl, combine scallions, corn kernels, parsley, basil, salt, pepper, and red-pepper flakes.
- Add flour and baking powder; mix until well combined.
- Stir in whisked eggs and half-and-half until a thick batter forms; fold in mozzarella and Parmesan.
- Heat vegetable oil in a skillet over medium heat. Scoop ¼-cup portions of the batter into the skillet.
- Fry until golden brown on both sides (about 3 minutes each side). Drain on paper towels.
- Assemble by layering fritters with peach slices, tomato slices, fresh mozzarella, and torn basil leaves on a platter. Drizzle with olive oil and season with salt and pepper.
