- 4 large eggs, separated
- 1/2 teaspoon cream of tartar
- 2 ounces low-fat cream cheese
- 1 teaspoon Italian herb seasoning
- 1/2 teaspoon sea salt
- 1/4–1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 300°F (150°C). Line two large baking sheets with parchment paper.
- Separate the eggs, placing the whites in one bowl and yolks in another.
- Add cream of tartar to the egg whites and beat until stiff peaks form.
- In a separate bowl, beat cream cheese until smooth. Add egg yolks one at a time, followed by Italian seasoning, sea salt, and garlic powder.
- Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the batter.
- Spoon 1/4-cup portions of the batter onto prepared baking sheets and spread into 4-inch circles.
- Bake for 15–30 minutes, depending on oven type, until golden and firm.
- Cool for a few minutes, then serve fresh or store for later.
Notes
- Adjust garlic powder based on taste.
- Cloud Bread is best consumed within 12 hours but can be refrigerated for up to 3 days or frozen for 3 months.
- For a sweeter version, omit the garlic and Italian seasoning and add vanilla extract or a low-carb sweetener.
