Description

Fluffy, light Cloud Bread is a healthy and easy low-carb bread alternative perfect for keto and gluten-free diets. With just a few ingredients, this versatile bread is a fantastic choice for sandwiches, snacks, or meal prep!


Ingredients

  • 4 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 2 ounces low-fat cream cheese
  • 1 teaspoon Italian herb seasoning
  • 1/2 teaspoon sea salt
  • 1/41/2 teaspoon garlic powder

Instructions

  • Preheat the oven to 300°F (150°C). Line two large baking sheets with parchment paper.
  • Separate the eggs, placing the whites in one bowl and yolks in another.
  • Add cream of tartar to the egg whites and beat until stiff peaks form.
  • In a separate bowl, beat cream cheese until smooth. Add egg yolks one at a time, followed by Italian seasoning, sea salt, and garlic powder.
  • Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the batter.
  • Spoon 1/4-cup portions of the batter onto prepared baking sheets and spread into 4-inch circles.
  • Bake for 15–30 minutes, depending on oven type, until golden and firm.
  • Cool for a few minutes, then serve fresh or store for later.

Notes

  • Adjust garlic powder based on taste.
  • Cloud Bread is best consumed within 12 hours but can be refrigerated for up to 3 days or frozen for 3 months.
  • For a sweeter version, omit the garlic and Italian seasoning and add vanilla extract or a low-carb sweetener.
