For the Salad:

  • ½ pound medium shells (about 3 cups)
  • ¾ cup sliced dill pickles
  • ⅔ cup diced cheddar cheese
  • 3 tablespoons minced white onion
  • 2 tablespoons chopped fresh dill
  • ½ cup dill pickle juice

For the Dressing:

  • ⅔ cup mayonnaise
  • ⅓ cup sour cream
  • ⅛ teaspoon cayenne pepper
  • 4 tablespoons dill pickle juice
  • Salt and black pepper to taste

Instructions

  • Cook the pasta – Boil the pasta al dente according to package directions. Rinse under cold water.
  • Soak in pickle juice – Toss the pasta with ½ cup pickle juice and let sit for 5 minutes, then drain.
  • Make the dressing – In a small bowl, mix mayonnaise, sour cream, cayenne, pickle juice, salt, and pepper.
  • Combine everything – In a large bowl, mix the pasta, pickles, cheese, onion, and dill.
  • Mix & chill – Pour the dressing over the salad and toss well. Refrigerate for at least 1 hour before serving.
