For the Salad:
- ½ pound medium shells (about 3 cups)
- ¾ cup sliced dill pickles
- ⅔ cup diced cheddar cheese
- 3 tablespoons minced white onion
- 2 tablespoons chopped fresh dill
- ½ cup dill pickle juice
For the Dressing:
- ⅔ cup mayonnaise
- ⅓ cup sour cream
- ⅛ teaspoon cayenne pepper
- 4 tablespoons dill pickle juice
- Salt and black pepper to taste
Instructions
- Cook the pasta – Boil the pasta al dente according to package directions. Rinse under cold water.
- Soak in pickle juice – Toss the pasta with ½ cup pickle juice and let sit for 5 minutes, then drain.
- Make the dressing – In a small bowl, mix mayonnaise, sour cream, cayenne, pickle juice, salt, and pepper.
- Combine everything – In a large bowl, mix the pasta, pickles, cheese, onion, and dill.
- Mix & chill – Pour the dressing over the salad and toss well. Refrigerate for at least 1 hour before serving.
