  • 4 slices bacon
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled and 1/2-inch diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 3 large Russet potatoes, peeled and 1/2-inch diced
  • 2 cups cooked chicken breast, cubed
  • 1 cup heavy cream
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 2 tablespoons fresh chives, chopped, for garnish

Instructions

  1. In a large stockpot or Dutch oven, cook the bacon over medium heat until crispy. Use a slotted spoon to remove the bacon, placing it on paper towels to drain. Leave 2 tablespoons of bacon fat in the pot.
  2. Add butter to the pot with the bacon fat. Once melted, add chopped onion and diced carrots; cook for 5-7 minutes until softened.
  3. Stir in minced garlic; cook for an additional minute.
  4. Sprinkle flour over the vegetables and stir constantly for 2 minutes to create a roux.
  5. Gradually whisk in chicken broth until smooth; bring to a simmer.
  6. Add diced potatoes; reduce heat to low, cover, and simmer for 15-20 minutes until fork-tender.
  7. Stir in cubed cooked chicken and heavy cream; heat through for 5 minutes without boiling.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with crumbled bacon and fresh chives.
