- ½ cup (113g) cooled, just melted butter
- ¾ cup (165g) packed light brown sugar
- ⅓ cup (80ml) mashed ripe banana (from 1 small banana)
- 1 large egg yolk
- ½ teaspoon vanilla extract
- 1 ½ cups (215g) all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (125g) dark chocolate chips (plus extra for topping)
- ⅓ cup (50g) chopped walnuts
Instructions
- In a large bowl, combine the cooled melted butter and brown sugar until smooth.
- Add the mashed banana and stir until fully incorporated. Mix in the egg yolk and vanilla extract.
- Whisk together the flour, cinnamon, baking soda, and salt in a separate bowl. Gradually fold the dry ingredients into the wet mixture.
- Stir in the chocolate chips and walnuts until evenly distributed. Cover and chill the dough for 1 hour.
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Scoop 1.5 oz of dough onto the prepared baking sheets, spacing them 2 inches apart. Press a few extra chocolate chips on top if desired.
- Bake for 10–12 minutes or until the edges are golden and the centers are slightly soft. Cool for 2 minutes on the baking sheet before transferring to a wire rack.
