- 2 large eggs, scrambled
- 8 ounces cream cheese, softened
- 1 cup shredded Monterey Jack cheese
- 2 large jalapeños, seeded and minced
- 12 egg roll wrappers
Instructions
- Cook bacon in a skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.
- In the same skillet, scramble the eggs until fluffy; let cool slightly.
- In a bowl, mix cream cheese, Monterey Jack cheese, bacon (reserve some for garnish), jalapeños, scrambled eggs, and green onions until combined.
- Lay an egg roll wrapper on a surface and place about 2 tablespoons of filling below the center. Fold corners over and roll tightly, sealing with beaten egg.
- Heat oil in a pot to 350°F. Fry egg rolls in batches for 3-4 minutes until golden brown. Drain on a wire rack.
