Ingredients

- 2 large eggs

- 1/2 cup milk
- 2 medium apples, peeled, cored, and diced into 1/2-inch pieces
- 1 teaspoon ground cinnamon

Instructions
- Preheat oven to 350°F. Grease and flour an 8×8 inch baking pan.
- In a medium bowl, combine 1/2 cup all-purpose flour, 1/4 cup granulated sugar, 1/4 cup light brown sugar, and 1/4 teaspoon ground cinnamon. Add the cold, cut butter. Using your fingertips or a pastry blender, cut the butter into the dry ingredients until coarse crumbs form. Set aside.
- In a small bowl, toss the diced apples with 1 teaspoon ground cinnamon.
- In a large bowl, whisk together 1 1/2 cups all-purpose flour, baking powder, and salt. In a separate large bowl, using an electric mixer, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternately add the dry ingredients and milk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Spread half of the cake batter evenly into the prepared 8×8 inch baking pan. Sprinkle the cinnamon-tossed diced apples over the batter. Dollop the remaining cake batter over the apples and gently spread it to cover as much as possible.
- Evenly sprinkle the prepared crumble topping over the top layer of cake batter.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. The crumble topping should be golden brown.
- Remove the cake from the oven and let it cool in the pan on a wire rack for at least 15 minutes before slicing. Once slightly cooled, cut into 9 square slices.
- Before serving, drizzle each warm or room-temperature slice with approximately 1 teaspoon of honey.
