  • 2 large eggs

  • 2 medium apples, peeled, cored, and diced into 1/2-inch pieces
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour (for crumble topping)
  • 1/4 cup granulated sugar (for crumble topping)
  • 1/4 cup packed light brown sugar (for crumble topping)
  • 1/4 teaspoon ground cinnamon (for crumble topping)
  • 1/4 cup (1/2 stick) unsalted butter, cold and cut into small pieces (for crumble topping)
  • 2 tablespoons honey (for garnish)

Instructions

  1. Preheat oven to 350°F. Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, combine 1/2 cup all-purpose flour, 1/4 cup granulated sugar, 1/4 cup light brown sugar, and 1/4 teaspoon ground cinnamon. Add the cold, cut butter. Using your fingertips or a pastry blender, cut the butter into the dry ingredients until coarse crumbs form. Set aside.
  3. In a small bowl, toss the diced apples with 1 teaspoon ground cinnamon.
  4. In a large bowl, whisk together 1 1/2 cups all-purpose flour, baking powder, and salt. In a separate large bowl, using an electric mixer, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternately add the dry ingredients and milk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Spread half of the cake batter evenly into the prepared 8×8 inch baking pan. Sprinkle the cinnamon-tossed diced apples over the batter. Dollop the remaining cake batter over the apples and gently spread it to cover as much as possible.
  7. Evenly sprinkle the prepared crumble topping over the top layer of cake batter.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. The crumble topping should be golden brown.
  9. Remove the cake from the oven and let it cool in the pan on a wire rack for at least 15 minutes before slicing. Once slightly cooled, cut into 9 square slices.
  10. Before serving, drizzle each warm or room-temperature slice with approximately 1 teaspoon of honey.
