- 4 medium zucchinis
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 egg, beaten

- 1 jar (24 ounces) marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips, lightly salt them, and let sit for 10 minutes to draw out moisture. Pat dry.
- In a bowl, mix ricotta, Parmesan, egg, chopped herbs, garlic powder, salt, and pepper.
- Spread the filling on each zucchini strip and roll tightly. Place seam-side down in a baking dish.
- Pour marinara sauce over the rolls and top with mozzarella cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until golden brown.
