  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • Fresh basil and parsley
  • 1 jar (24 ounces) marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips, lightly salt them, and let sit for 10 minutes to draw out moisture. Pat dry.
  3. In a bowl, mix ricotta, Parmesan, egg, chopped herbs, garlic powder, salt, and pepper.
  4. Spread the filling on each zucchini strip and roll tightly. Place seam-side down in a baking dish.
  5. Pour marinara sauce over the rolls and top with mozzarella cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until golden brown.
