  • 4 medium zucchinis
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips. Sprinkle with salt and let sit for 10-15 minutes to draw out moisture.
  2. In a bowl, mix ricotta cheese, egg, oregano, basil, salt, and pepper until smooth.
  3. In a baking dish, layer marinara sauce, half the zucchini slices, half the ricotta mixture, more marinara, and mozzarella. Repeat layers; finish with Parmesan.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly.
  5. Let cool for 10 minutes before slicing and serving.
