  • 2 cups cooked white rice (preferably day-old)
  • 4 large eggs
  • 1 cup mixed vegetables (peas and carrots recommended)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 teaspoons minced garlic
  • Salt and pepper to taste
  • 2 green onions, finely chopped

Instructions

  1. If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Scramble the eggs until fully cooked and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil along with minced garlic and mixed vegetables. Cook for 3-4 minutes until tender.
  4. Add the cooled rice to the skillet, breaking up any clumps. Stir in soy sauce and sesame oil, cooking for another 3-5 minutes until heated through.
  5. Mix in the scrambled eggs and chopped green onions. Adjust seasoning with salt and pepper as desired.
