  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Prepare the crust: In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Divide into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
  2. Make the filling: Toss sliced apples with lemon juice, sugar, cinnamon, nutmeg, and flour; let sit for 15 minutes.
  3. Roll out one dough disc to fit a 12-inch pie pan; fill with apple mixture and dot with butter.
  4. Roll out the second dough disc to cover the pie; trim excess dough, crimp edges, and cut slits for steam to escape. Brush with beaten egg and sprinkle with coarse sugar.
  5. Bake at 425°F for 15 minutes; reduce temperature to 350°F and bake an additional 30–40 minutes until golden brown.
