Ingredients
Scale
For the Dough:
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon sugar
- 3/4 cup warm water (110°F/45°C)
- 2 cups bread flour
- 1 teaspoon salt
- 1 tablespoon olive oil
For the Garlic Sauce:
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced or grated
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
For the Toppings:
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- Optional toppings: Fresh spinach, mushrooms, caramelized onions, or prosciutto
Instructions
- Prepare the Dough:
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Turn the dough onto a floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Make the Garlic Sauce:
- In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant but not browned.
- Sprinkle in the flour and whisk to combine, cooking for another minute to remove the raw flour taste.
- Gradually whisk in the heavy cream, continuing to stir until the sauce thickens, about 3-5 minutes. Stir in the Parmesan cheese and season with salt and pepper to taste. Remove from heat and set aside.
- Assemble the Pizza:
- Preheat your oven to 475°F (245°C) and place a pizza stone inside to heat up, or prepare a baking sheet.
- Punch down the risen dough and turn it out onto a floured surface. Roll it out to a 12-inch circle, or stretch it by hand if you prefer a more rustic look.
- Transfer the dough to a pizza peel or the back of a baking sheet lined with parchment paper.
- Spread the garlic sauce evenly over the dough, leaving a small border around the edges for the crust.
- Sprinkle the shredded mozzarella and Parmesan cheeses over the sauce, then dollop the ricotta cheese evenly across the pizza. Add any additional toppings you like.
- Bake the Pizza:
- If using a pizza stone, carefully slide the pizza onto the stone. If using a baking sheet, place the pizza directly on the sheet.
- Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
- Remove the pizza from the oven and let it cool for 5 minutes before slicing and serving.
Notes
- Experiment with Cheeses: While mozzarella is the traditional cheese for white pizza, don’t hesitate to experiment with other cheeses like fontina, provolone, or goat cheese for added flavor and creaminess.
- Enhance the Garlic Sauce: For an extra burst of flavor, add a pinch of red pepper flakes to the garlic sauce while cooking, or mix in fresh herbs like basil, thyme, or oregano.
- Finishing Touches: After baking, consider adding a drizzle of extra virgin olive oil, a sprinkle of sea salt, or a handful of fresh arugula for added flavor and presentation.
