  • 9 lasagna noodles
  • 3 cups fresh spinach
  • 1 cup kale
  • 8 ounces mushrooms
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups white sauce (béchamel)
  • 4 cloves garlic

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles al dente; drain and set aside.
  3. Sauté sliced mushrooms in olive oil until golden, then add garlic, spinach, kale, salt, and pepper until wilted.
  4. In a bowl, mix ricotta cheese, half mozzarella, egg, oregano, and optional red pepper flakes until smooth.
  5. In a baking dish, layer white sauce, noodles, ricotta mixture, sautéed greens and mushrooms; repeat layers ending with noodles topped with remaining white sauce and mozzarella.
  6. Bake covered for 25 minutes; uncover and bake an additional 15 minutes until golden.
