- 9 lasagna noodles
- 3 cups fresh spinach
- 1 cup kale
- 8 ounces mushrooms
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 cups white sauce (béchamel)
- 4 cloves garlic
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles al dente; drain and set aside.
- Sauté sliced mushrooms in olive oil until golden, then add garlic, spinach, kale, salt, and pepper until wilted.
- In a bowl, mix ricotta cheese, half mozzarella, egg, oregano, and optional red pepper flakes until smooth.
- In a baking dish, layer white sauce, noodles, ricotta mixture, sautéed greens and mushrooms; repeat layers ending with noodles topped with remaining white sauce and mozzarella.
- Bake covered for 25 minutes; uncover and bake an additional 15 minutes until golden.
