  • 1 ½ cups graham cracker crumbs (or crushed Oreo cookies)
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 6 oz white chocolate, melted
  • ½ cup heavy cream
  • 1 tablespoon pure vanilla extract

For the Raspberry Sauce:

  • 1 ½ cups fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Combine graham cracker crumbs, melted butter, and sugar. Press into a springform pan and bake for 10 minutes. Let cool.
  3. Make the raspberry sauce: Heat raspberries, sugar, and water in a saucepan until softened. Mix cornstarch with water, add to the sauce, and stir until thickened. Strain and set aside.
  4. Melt the white chocolate using a double boiler or microwave in short intervals. Let cool slightly.
  5. Prepare the cheesecake batter: Beat cream cheese until smooth. Add sugar and mix. Add eggs one at a time, then fold in melted white chocolate, heavy cream, and vanilla extract.
  6. Assemble the cheesecake: Pour half of the batter over the crust. Drizzle half of the raspberry sauce and swirl gently. Add remaining batter and repeat the swirling process.
  7. Bake in a water bath for 55–65 minutes until the center is slightly jiggly. Turn off the oven and let it rest inside for an hour.
  8. Cool & chill in the refrigerator for at least 6 hours or overnight.
  9. Serve with extra raspberry sauce, whipped cream, or white chocolate shavings.
