  • 20 ounces pineapple tidbits, drained
  • ½ cup chicken stock
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 8 boneless skinless chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • ½ small yellow onion, peeled and diced
  • Fresh parsley and green onions, for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix pineapple tidbits, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder until well combined.
  3. Season chicken thighs with salt and pepper.
  4. In an ovenproof skillet over medium heat, add olive oil and sauté the diced onion until softened.
  5. Add seasoned chicken thighs to the skillet and sear for about 3-4 minutes on each side until golden brown.
  6. Pour the prepared sauce over the chicken and transfer the skillet to the oven. Bake for 20-25 minutes until cooked through.
  7. Let rest for 5 minutes before serving, garnished with parsley and green onions.
