- 1 1/2 pounds cubed potatoes
- 4 slices bacon, crumbled
- 1 small onion, diced

- 1 tablespoon grainy mustard
- Salt and pepper to taste
Instructions
- In a large pot, boil cubed potatoes in salted water until just tender (about 10 minutes). Drain well.
- Cook bacon in a large pan until crispy. Remove bacon but reserve about 2 tablespoons of grease in the pan.
- Sauté diced onion in the reserved bacon grease until tender (approximately 5 minutes).

- Add apple cider vinegar, both mustards, salt, and pepper to the pan; mix well.
- Combine boiled potatoes and crumbled bacon with the dressing; toss gently to coat. Serve warm.
