  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • ¾ cup diced tomatoes
  • ½ cup sour cream
  • ¼ cup sliced black olives (optional)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef with salt, pepper, and taco seasoning until browned. Drain excess grease.
  2. Stir in black beans and corn; add salsa and heat through.
  3. Preheat oven to 350°F. In a greased 9×13 inch baking dish, layer crushed tortilla chips, followed by the beef mixture and top with cheddar cheese.
  4. Bake for 15-20 minutes until cheese is melted and bubbly.
