- 1 pound ground beef
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup corn kernels (fresh or frozen)
- 8 corn tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- ½ cup chopped green onions
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ground beef along with salt, black pepper, chili powder, and cumin. Cook until browned, about 5-7 minutes, and drain excess fat.
- In the same skillet, add in the black beans, diced tomatoes with green chilies, and corn. Stir well to combine all ingredients and cook for an additional 2-3 minutes until heated through.
- Preheat your oven to 350°F. In a baking dish, layer half of the beef mixture, followed by tortilla quarters and cheese. Repeat layers and finish with cheese on top.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and continue baking for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
