  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh or frozen)
  • 8 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • ½ cup chopped green onions
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef along with salt, black pepper, chili powder, and cumin. Cook until browned, about 5-7 minutes, and drain excess fat.
  2. In the same skillet, add in the black beans, diced tomatoes with green chilies, and corn. Stir well to combine all ingredients and cook for an additional 2-3 minutes until heated through.
  3. Preheat your oven to 350°F. In a baking dish, layer half of the beef mixture, followed by tortilla quarters and cheese. Repeat layers and finish with cheese on top.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and continue baking for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
  5. Garnish with chopped green onions before serving.
