  • 150 g vegan butter or coconut oil (melted)
  • 3 large apples (peeled and diced)
  • 50 g brown sugar
  • 260 g raw cashews
  • 250 g firm silken tofu
  • ¾ cup vegan yogurt
  • Maple syrup or sugar
  • Lemon juice

Instructions

  1. Preheat oven to 180°C (350°F). Crush cookies and mix with melted butter. Press into a springform pan and bake for 10 minutes.
  2. Cook diced apples with brown sugar and cinnamon in a saucepan for 8-10 minutes until softened, then cool.
  3. Blend cashews, silken tofu, maple syrup, yogurt, lemon juice, cornstarch, vanilla extract, and salt until smooth.
  4. Layer half the cheesecake filling in the cooled crust, add cooked apples, top with remaining filling, and sprinkle crumble topping.
  5. Bake for 55–60 minutes until edges are set but center jiggles slightly. Cool at room temperature then refrigerate for at least 4 hours before serving.
