- 1/4 cup (60 mL) vegan heavy cream or coconut cream
- 1 tbsp cornstarch
- 1 tbsp maple syrup or maple butter
- 1/4 cup (50 g) granulated sugar
- 1 tsp vanilla extract or vanilla bean paste
- 2 large gala or fuji apples, diced
- 1 tbsp vegan butter
- 3 tbsp light brown sugar
- 2 tsp ground cinnamon
- 1 tbsp water
- 1/2 tbsp flour
- 1/2 cup (63 g) all purpose flour
- 1/3 cup (80 g) granulated sugar
- 3 tbsp vegan butter, melted
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tbsp soy milk
Instructions
- In a bowl, combine warm dairy-free milk, 1/4 cup sugar, and yeast; let it foam for 10 minutes.
- Mix in flour and remaining sugar until just combined; add applesauce and vanilla.
- Gradually incorporate vegan butter while mixing until a soft dough forms. Knead for 10–15 minutes.
- Allow dough to rise in a greased bowl for 60–120 minutes until doubled in size.
- Prepare the filling by mixing vegan cream cheese with other filling ingredients.
- Shape risen dough into balls and rest on parchment-lined baking sheet for 15–20 minutes.
- Create an indention in each bun, fill with cheesecake mixture and diced apples, then top with crumble before baking at 375°F (190°C) for about 25–30 minutes.
