  • 4 large russet potatoes
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • ⅓ cup cooked bacon, crumbled
  • ¼ cup chives, finely chopped
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean and poke holes in each with a fork. Bake on the oven rack for 45-60 minutes until tender.
  2. Allow potatoes to cool slightly, then cut in half lengthwise and scoop out insides into a mixing bowl.
  3. Add sour cream, milk, butter, cheese, bacon, chives, salt, and pepper to the bowl. Mash until smooth.
  4. Refill potato skins with the mixture, mounding slightly at the top.
  5. Return filled potatoes to a baking sheet and bake for another 15-20 minutes until golden brown.
