- 1 lb. shrimp (raw, peeled, deveined)
- 12 ounces farfalle pasta
- 2 tablespoons olive oil
- 1 tablespoon garlic (minced)
- 2 tablespoons Italian seasoning (divided)
- 1/3 cup dry white wine
- 1/4 cup unsalted butter
- 1 1/2 cups heavy cream
- 1 1/2 cups Parmesan cheese (finely grated)
- 2 cups fresh baby spinach (packed)
- 15 oz. can fire-roasted tomatoes (drained)
Instructions
- Cook the pasta: Boil pasta in salted water until al dente. Drain and set aside.
- Cook the shrimp: Heat olive oil in a pan, add 1 tbsp Italian seasoning, and cook shrimp 2 minutes per side until pink. Set aside.
- Make the sauce: Deglaze the pan with white wine, then add butter and garlic. Stir in heavy cream and remaining Italian seasoning. Simmer for 5 minutes.
- Finish the sauce: Lower heat and whisk in Parmesan cheese. Stir until smooth.
- Combine ingredients: Add spinach and fire-roasted tomatoes to the sauce. Toss in cooked pasta and shrimp.
- Serve: Garnish with extra Parmesan or fresh parsley. Serve hot.
Notes
- Substitute white wine with chicken broth if desired.
- Store leftovers in the fridge for up to 3 days. Reheat gently with a splash of cream.
