Ingredients List
- For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 tablespoon pure vanilla extract
- For the Caramel Sauce:
- 1 cup sugar
- 6 tablespoons butter
- 1/2 cup heavy cream
- 1/2 teaspoon salt (optional)
- For the Chocolate Sauce:
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- For the Pecans:
- 1 cup pecans, toasted and chopped
Instructions
- Prepare the Ice Cream Base:
- In a mixing bowl, whisk together the heavy cream, milk, sugar, and vanilla extract until the sugar is fully dissolved. Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions until the mixture reaches a soft-serve consistency.
- Make the Caramel Sauce:
- In a saucepan, melt the sugar over medium heat, stirring constantly until it turns into a smooth amber-colored liquid. Add the butter and stir until melted. Slowly pour in the heavy cream while continuing to stir. Add a pinch of salt if desired. Let the sauce cool slightly before using.
- Make the Chocolate Sauce:
- Combine cocoa powder, sugar, and water in a saucepan. Heat over medium heat, stirring constantly until the mixture is smooth and begins to thicken. Remove from heat and stir in the vanilla extract. Let the sauce cool before using.
- Toast the Pecans:
- Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them in the oven for about 5-7 minutes, or until they are fragrant. Let them cool slightly, then chop them coarsely.
- Assemble the Ice Cream:
- In a freezer-safe container, layer the churned ice cream with swirls of caramel and chocolate sauce, and sprinkle with toasted pecans. Repeat the layers until all ingredients are used. Use a spatula to gently swirl the sauces through the ice cream without fully mixing them.
- Freeze and Serve:
- Cover the ice cream with a lid or plastic wrap and freeze for 2-4 hours, or until firm. When ready to serve, scoop the ice cream into bowls and enjoy the rich, indulgent flavors of Turtle Ice Cream.
Notes
- Storing:
- After assembling the ice cream with its layers, transfer it to an airtight, freezer-safe container. Press a piece of plastic wrap directly onto the surface of the ice cream to prevent ice crystals from forming. Seal the container and freeze for up to 2 weeks.
- Reheating:
- Ice cream doesn’t typically require reheating, but if it’s too hard to scoop, let it sit at room temperature for 5-10 minutes before serving. This softens it slightly, making it easier to serve without compromising the texture.
